I haven't posted about my boarder line obsessed love of breakfast yet, so here we go! I don't understand people skipping breakfast- to me it's the best meal, it sets me up for the day and depending on what I eat it sets out my eating habbits for the day... As I'm currently trying to get fitter and lose a little timber from around my 'biscuit pouch' as I've so fondly named it, I'm eating more nutricois filling breakfasts. Here's my currently favourite that sets me up for a busy day. This is my extra thick, super filling smoothie that curves my hunger for hours during a long day at work!
Ingredients:
3 Tablespoons of organic rolled oats
2 shots of Chia Seeds (I used these)
1 Small handful of walnuts
1 medium/large banana (use fruit of your choice)
Unsweetened Almond Milk (I measure the cup I want to fill in the morning by half/eyeball it)
1 Tablespoon of organic runny honey
A pinch of Cinnamon
A pinch of nutmeg
What to do:
I put all the dry ingredients in the blender first- so the oats, seeds and nuts and grind them into a fine flour, I've found this gives a better overall texture when you come to eat this as it's a lot smoother and the oats don't go so 'bitty' (cringe at that word if you watched Little Briton!) This also help thicken up the smoothie over night without turning into overnight oats!
Once they're all ground up I add in the banana, honey, cinnamon, nutmeg and almond milk and leave to blend for a good 1-2 minutes until its smooth. Simple right?
I make this the night before and leave it in an airtight container in the fridge to thicken up.
I tend to take this container to work with me and decant it into a glass, this is now pretty thick as the ground oats and chia seeds have absorbed a lot of the liquid to its more of a yoghurty thickness which I love; it feels more filling! I top this with some sugar free granola, fresh fruit or nuts to get some different which makes it much more decadent!
